Puer: centuries-old oriental traditions of tea making
Chinese culture is inseparable from the tea ceremony - those close to the ritual claim that spiritual energy is provided not only by the divine drink, but also by the process of brewing it.
Today, Chinese experts create over 600 types of tea, which are exported to all countries of the world. Pu-erh is a pressed post-fermented tea, which is the hallmark of China.
The birthplace of pu-erh is the village of the same name in the Yunnan region. Incredibly, tea trees that are over a thousand years old still grow on these lands!
The word "pu-erh" consists of two characters. In the Han Dynasty, this was the name of a small town 370 km south of Kunming - from this small point on the big map of China, tea set off on a long journey around the planet. So the name of the trading town formed the basis of tea - pu-erh.
There is another interpretation of the origin of the name of the tea variety: "pu" is the abbreviated name of the Bodhisattva Pu Xian, and "er" means ears. The combination symbolizes the presence of the goddess in a person's life, she hears him! Associations with the organ of hearing arose due to the shapes of large tea leaves used for some types of pu-erh.
Each version is interesting in its own way and only emphasizes the poetics and deep philosophical meaning that the Chinese invest in the origin of national relics.
Discovering Pu-erh tea for yourself!
Pu-erh is a post-fermented tea with varying aging times: it is believed that the older the leaves, the tastier the drink. This feature does not apply to other types of raw materials, which, as is known, lose their valuable properties over time.
The leaves used to produce Pu-erh tea are necessarily subjected to artificial, but more often natural, aging (from 1 to 8 years). The fermentation processes occur slowly, thanks to which the entire composition of vitamins and trace elements is preserved.
Two types of pu-erh are used: raw (sheng) and ready (shu). According to the consistency, tea is found as pressed and loose. Modern craftsmen give the tiles various intricate shapes: in the form of pancakes, balls, squares, nests, pumpkins, etc.
- Raw pu-erh has a characteristic green hue: a rich, tart flavor reminiscent of sour prunes.
- The finished brew gives a rich dark brown color and is a bit like chocolate.
Benefits for the soul and body
People prefer to buy pu-erh not only because of its wonderful aroma and wonderful taste. Real Chinese pu-erh is a source of beneficial qualities that have a positive effect on the human body.
Among the therapeutic and preventive properties of the drink:
- lowering cholesterol levels;
- improving the functioning of the gastrointestinal system;
- reducing the risk of developing cardiovascular pathologies: heart attack, stroke;
- improved metabolism, effectiveness in weight loss;
- cell rejuvenation;
- mood improvement.
As a tea, pu-erh is invigorating and tonic, so it is better to drink it before lunch. Mold is a detrimental factor for brewing, so the leaves should be stored in well-closed dry containers and preferably out of sunlight.
Brewing features
In Ukraine, pu-erh is often brewed the old-fashioned way, using an ordinary enameled teapot and steep boiling water. To ensure that the drink does not lose its beneficial natural qualities and reveals its bouquet of aromas, some nuances should be observed:
- 4 grams of dry leaves are enough for 150 milliliters of water;
- before placing the tea leaves in the container, it must be washed to remove dust;
- the temperature of boiled water should not exceed 90 degrees - the boiling water for pu-erh should be cooled slightly beforehand;
- Chinese pu-erh is the same tea that is brewed several times in a row, increasing the steeping time by 30 seconds at each subsequent stage;
- Pu-erh goes well with milk, honey, cinnamon and other additives, which allows you to experiment with taste.
